Powdered in the bowl of a stand mixer with the whisk approach heavy cream and 1 teaspoon powdered sugar at medium to high speed until the use of stiff peak powder. Cover the bottom of a parfait glass with 1 tablespoon of strawberry puree. Add the remaining 1/4 cup (35 g) diced strawberries. Drizzle top with 1 scoop vanilla ice cream and 1 tablespoon of strawberry puree. Top with 1 scoop vanilla ice cream and raspberries with an iced tea to smooth ice cream and to arrange fruit as required. Drizzle top with 1 scoop vanilla ice cream and with the remaining strawberry puree.
