Cut the flowers out of the heads of the broccoli into bite -size pieces, then cut them off and chop the stems finely. Tip in A Sieve Or metal steamer and over a pan with boiling water. Cover and steam for 10-12 minutes until a sharp knife brillows the broccoli. Let steam dry, then tip into a large airtight container and drizzle over the olive oil, spice peppers, cayenne pepper, lemon zest and well. Shake gently to combine and then put aside in the fridge to the need. Will remain cool for up to four days.

Use this to make ours Lemon orzo with trout, spiced broccoli & pepperonataor our Fried lemon broccoli & mascarpone flatbread.
