Pour the beaten eggs into the bowl with onion and bacon, wipe To combine, then stir in the mustard, crème fraîche, nutmeg and chives. Season with a lot of black pepper and some salt. Pour the mixture into the pastry housing. Steam the edge of the pastries with a little water and then lift the other pastries over the top. Press a fork or press the edge to seal it. Cut a small cross into the middle so that steam can escape and then brush the remaining egg over the top of the cake. Bake for 40-45 minutes until it is golden.
