As a child, I dreamed of the summer camp with s’Mores and scary stories about the fire. The only camps I took part in were workshops with mathematics, natural sciences and creative writing in which my parents had inscribed me. There were no s’Mores or campfires, so I chose toasting marshmallows about the gas stove in our kitchen and stood between chocolate digestion to create my own measurement version of consumption. The latest addition to my roster is this brownie recipe from María del Mar CuadraThese poles, which we originally published in 2011 in 2011. With a sweet, nutty Graham -Cracker crust, a layer of Fudgy Brownies and a covering of roasted marshmallows, these poles are a more hearty, significant view of classic s’Mores. A hint of immediate espresso powder improves the fruity notes of the bittersweet chocolate and prevents everyone from being bloody, while a quick roast creates a nice sticky marshmallow topping. They are rich, chocolaty and exactly the right amount of sticky. In other words, these brownies record the flavors and textures that I love in S’Mores – no campfire.
