Light, fresh and with a hint of heat, lively tiller is a staple food salad in many East African countries, including Kenya, Tanzania and Uganda, to name just a few. In its simplest form, the East African salad has ripe juicy tomatoes, crispy raw onions, spicy fresh chillies and a hint of acid made of fresh lemon or lime juice. For the first time I learned to make Kachumabri in Kenya, where it is often served next to Nyama Choma (grilled meat) BehaveOr paired with hearty rice dishes like Pilau. While it is often enjoyed as an accompanying salad, it is also a popular burden for Street food dishes such as Mayai Pasua (halved hard -boiled eggs), Rauchies (halved grilled sausage) or Rolex, Mutura (blood extraction). It gives the simplest dishes a fresh taste. I often tell those who are not familiar with Kachumbari Gallo peak‘s less onion cousin. Similar to the salsa, the beauty of Kachumbari is its versatility. Variations of the salad are infinite, with cucumber and/or avocado the most common additions.

As with any tomato salad that is based only on a handful of fresh ingredients, the key to optimizing Kachumbari’s taste is not only in the quality of the products you use, but also how the vegetables are prepared. This tomato salad with five ingredients is easy to gather, but in this recipe we use a few tricks supported with science to create the most tasteful version. Read below for my tips and the full recipe.

Key steps for the most aromatic kachumbari

Start with fresh tomatoes, preferably plum. When I first learned to make Kenya for the first time ago in Kenya, I learned that plum tomatoes are the most widespread change in the country, and that’s why I use it here in my recipe. The solid, not too water texture of plum tomatoes works perfectly for this salad, but really every fresh tomato in the season that you enjoy, which you have cut and served in a salad in a salad, will work well here. I prefer the tomatoes that are seasoned in bite -sized pieces, but they can also cut them into slices in crescent carnival when they prefer it.

But to weaken the sharp taste of the onion so that it does not overwhelm the tomato, I recommend briefly to soak the onion slices in warm water before expanding the salad. Make sure that the water feels warm – a water that should be about 110 ℉ ok – as Kenji emphasizes in it Onion preparation manual. The speed of the chemical and physical reactions increases with the temperature. The use of warm water therefore means that the onions release their fleeting connections faster than when using cold water. It only takes about a minute to free even the sharp onions of your kick. But make sure that you don’t let the Onions sit in water for more than 5 minutes after cutting: you will actually become sharpness when you rest.

Add Peppy taste. Fresh Serrano Chile adds exactly the right touch of heat. You can choose the heat level according to your wishes by either leaving the seeds and veins or removing them before cutting a less spicy version. I prefer a stricter Serrano chile, but Jalapeño will work just as well. Chopped coriander and a few tablespoons of lime or lemon juice light up the taste even more.

Make the salad with your preferred fresh additions. My recipe below is a classic version of Kachumbari, but you are welcome to experiment with additional ingredients such as avocado and/or cucumbers or other salad fountains that you love. I only recommend not overdo it. The simplicity of this court makes it so wonderful and makes it a perfect addition to every summer meal.

  • 1/2 small red onion ((3 Ounce; 85 G) cut thinly into slices

  • 1 1/2 pound ((680 G))) ripe plum or Roma tomatoes (to 6 large), in 1-inch bite size (approximately 3 Cup) (see notes)

  • 1 fresh Serrano or Jalapeño Chile pepperDown in thin rings or finely (see notes)

  • 1/2 cup Approximately chopped fresh coriander leaves And delicate stem (out of 1 Small bunch coriander)))

  • 2 tablespoon ((30 ML))) Fresh lime or Lemon juicePlus more to taste

  1. Cover onion with hot water in a large bowl (110 to 130 ° C) and let it sit for 1 minute. Drain with a colander, then rinse briefly under hot water and put it in a small bowl. set aside.

  2. Put chopped tomatoes in the now empty colander, which is placed over the now empty bowl and season with 3/4 teaspoon of kosher salt. Throw to coat. Put aside for dripping at room temperature, and legend, until tomatoes drain their juices, at least 10 minutes or up to 1 hour.

  3. Throw the juice out of the bowl and put the tomatoes into the now empty bowl. Add the washed onions, Serrano, coriander and lemon or lime juice. If necessary, season with salt and additional lime or lemon juice to the taste. Serve immediately.

Variations

The joint additions include subdued cucumber and avocado. If you add avocado, make sure it is ripe but firm enough to keep its shape.

Notes

The recipe can be doubled.

While Roma tomatoes are used to produce the salad in Kenya, any fresh, mature tomato can be used in this salad.

For a less spicy version, remove the seeds from the Chile pepper before cutting and/or replacing a Jalapeño chilli.

Make-based and storage

The onions can be rinsed and the tomatoes can be salted and left at room temperature for up to 1 hour before making the salad.

Kachumbari is best enjoyed, but can be stored up to 1 hour at room temperature or cooled up to 1 day before serving. Cool all remains in an airtight container for up to 1 day. If you are cool, bring to room temperature before serving and drain the excess fluids you have to drain your pooled.
