Carol Burnet’s wood roast is comfort food from its best side
Meatloaf Can be a surprisingly polarizing dinner. I found that people either love it or hate it. I am fully in the “Love IT” camp, so I was excited to try a recipe that recently became aware of me: Carol Burstets’s wood fry.

(In fact it was published in Pearl Baileys cookbook “Pearl’s kitchen”.) But in contrast to most recipes, she instructs them to “bake it and then go to eat”. Burnett could have been on something.
How to make Carol Burnet’s meatloaf
Burnett first announced this recipe in an episode of “The Carol Burnett Show” when he was asked by an audience. “If you cook, what is your favorite recipe?” In the middle of your Sketch comedy showBurnett replied: “I do a great meatloaf.”
Your meat roast reminds of something you would see in one Cookbook of the small town church. The list of ingredients is simple and contains beef wood meat (or “ground”, as Burnett called them), eggs, a little milk, tomato sauce in canned food, onions, bread crumbs, garlic salt and onion salt. A few sources that I have found also list a little green peppers, so I also added that.
It is a simple meatloaf that will certainly not win beauty structures, but if you love a classic meat roast, you should bake Burnets version – with a few changes.
My tips to make Carol Burnet’s meat roast recipe
Burnett gave a hard instruction effort on the show and said he should bake it at 350 degrees F for 45 minutes and “Then you go to eat.” And even though there are days when the food makes sense, I think that you can make some changes so that the meatloaf keeps you for the night at night.
The basic recipe below comes together quickly. However, if you have a few additional minutes, you can transform the taste into something more extraordinary with these tips. Then enjoy side by side Fried vegetablesPresent mashed potatoesOr another favorite Dinner.
So I would recommend optimizing Burnett’s recipe:
- Push the spices up. In the beginning, Burnet’s original meat roasts are not missing taste. I recommend double the spices – maybe even use garlic powder and onion powder instead of garlic salt and onion salt and then much more heavier on the additional salt. In this way you get more pure onion and garlic taste.
- Use additional aromatics. I also recommend adding more onions and peppers and maybe a little fresh garlic. To take the additional moisture into account from the vegetables, increase the breadcrumbs to 3/4 cup.
- Add more depth to topping. Finally, add some ketchup, brown sugar and a dash of Worcestershire to the tomato sauce that is poured over the meat roast before baking. This will give the meat roast the sweet tanging that we love. Without these additions, the meat roast can be easy to prepare, but there is no intrigue.
Carol Burnet’s hacking roast recipe

Serves 8
Ingredients:
- 2 eggs
- 2 tablespoons of milk
- 1 (15 ounces) can of tomato sauce
- 1/4 cup of chopped onions
- 1/2 cup of chopped green peppers
- 1 teaspoon of salt
- 1 teaspoon of ground black pepper
- 1 teaspoon of onion salt
- 1 teaspoon of garlic salt
- 2 pounds 85/15 beef minced meat
- 1/2 cup of bread crumbs
Directions:
- Preheat the oven to 350 degrees.
- Whisk the eggs and milk in a large bowl.
- Pour half of the can of tomato sauce and whisk them.
- Add the onions, green peppers, salt, ground black pepper, onion salt and garlic salt. Add the beef wood meat and bread crumbs and the “squish” (Pro Carol) thoroughly with clean hands.
- Transfer the beef mixture into the prepared pan and pour the remaining tomato sauce over it. Put in the oven and bake for 45 minutes to 1 hour.
- Let the meat roast rest in the pan for about 20 minutes until it cools down to take out of the pan and cut it into slices.
