Recently I am on Nicole Kidman’s crispy recipe from Orecchiette from an old copy of Paul Newman’s “Newman’s own cookbook” chock-full of celebrity recipes and anecdotes and realized that she may be concerned. How to make Nicole Kidman’s crispy orecchiette with broccoli, pine kernels and garlic

Cook 16 ounces of orecchiette in a large saucepan with boiling water until it is only shy in front of al dente. Drain and rinse the pasta under cold water to prevent over cooking.

Hold two large frying pans. Heat vegetable oil in 1/4 cup. As soon as it is hot, add the cooked orecchiette into an even layer. Let it fry for about 3 minutes, then turn around and cook it for 2 minutes or until the pasta are slightly browned on all sides. Repeat until all the pasta are fried.

With one of the same pans, add 5 cups of broccoli flowers and 2 tablespoons of splitter garlic to the remaining oil. Fry for about 5 minutes. Then pour 1/3 cup of white wine, 1/4 cup of lemon juice and a pinch of salt and pepper. Adjust the spice of taste. Let it boil for another 3 minutes.

Transfer the broccoli mixture into a larger pan. Add the fried orecchiette, 3 tablespoons of balsamic vinegar, 6 tablespoons softener salted butterand 1/2 cup of roasted pine nuts. Fry over medium to high heat until the butter has been completely melted and everything has been covered.

End with 1 cup of freshly grated Parmesan. Serve immediately.
