For the fourth edition of the 5 o’clock podcast from Apron, Claire drives north to Sheffield to get a lively kitchen session with the comedian Jamie Macdonald. Jamie, who is blindly, exceptionally large and effortlessly funny, welcomes Claire with a flowering, not least thanks to the limitless energy of his new puppy, which occurs as soon as the front door opens.
Claire arrives, ingredients in tow, ready to combat jamies, dependent shopping list. It is a fascinating selection: Seabass, half a package Orzo, three leeks and a glass of crème fraîche. But that’s just the beginning. Soon the table with ‘nduja, lemons, a bottle of good olive oil and to Claires joy, a series of speaking scales, will be adorned. There are many questions when the two get stuck.
Cooking with Jamie is a joyful chaos. Between the laughter, the conversation flows from the ups and downs of the Edinburgh edge to the wild swimming, loud owls and the special features of the “Scottish risotto”, as Jamie’s mother conjured up in the 1980s. In the meantime, the kitchen fills with aromas of the Seabass, which sizzles in the pan, orzo, flowering with leek, and nduja melts into crème fraîche.
Cooking with Jamie is a tonic. His speaking scales are a revelation (Claire already desires a set), but what is most noticeable is Jamie’s instinctive approach to cooking. He navigates the kitchen with confidence and flair and proves that a big taste knows no limits. As all the good chefs know, it is the palate that counts and Jamie’s is unsurpassed.
